🌍 Overview

This coffee comes from the Dbarbosa coffee on Fazenda Cachoeira, a family-run estate in the Minas Gerais region of Brazil, an area globally respected for producing naturally sweet, approachable specialty coffees. Grown at around 1,100 metres above sea level, the farm benefits from warm days, cool nights and clearly defined seasons — ideal conditions for slow cherry development and even ripening.

This lot is 100% Red Catuai, a Brazilian mainstay variety prized for its reliability, sweetness and structured cup profile. It performs particularly well at this altitude, producing dense cherries that translate into body and depth in the cup.

Processed using the Natural method, the coffee is dried inside the fruit, allowing sugars from the cherry to influence the bean. The result is a fuller body, richer sweetness and classic Brazilian comfort notes — chocolate, nuts and caramel — with a gentle fruit undertone rather than bright acidity.

Production combines traditional farming knowledge with modern quality control, and the farm operates with strong environmental and social responsibility standards. Direct trade relationships help maintain transparency from farm to roastery, ensuring consistent quality year after year.
