DARK ROAST

Our Captain's Blend is for those looking for a more adventurous, dark-roasted coffee but want to taste coffee rather than an oily mess in their cup. We've never fully enjoyed roasting coffee beans too dark.  In our opinion, whenever we see "Italian roast" we see that as a lazy roaster's way of saying they just left the roaster on too long.  We take the Captain's blend as far as we can without roasting everything to a dry husk. "Italian roast" coffee just tastes bitter in our opinion.  To the extent that we believe that most palettes think that is how coffee should taste!  It isn't.  Coffee should never be bitter - and so we push this to the edge of bitterness but no further.

In the Captain's blend we have a 70/15/15 ratio of Brazil, Columbian and Ugandan and roast them darkly.  I mean, that's not to say we stand around with witch's hats on our heads, reciting incantations to our overlord with a cauldron and all that - it means we roast the beans to a darker, intense colour than we normally would. 

Although thinking about those hats .. there's an idea ..
