From the volcanic landscapes of Santa Rosa, this washed lot was processed at the Ayarza cherry mill, where cherries are carefully selected to ensure consistency and quality.

The team at Ayarza maintains strict standards throughout, paying a premium for ripe cherry and controlling each stage of processing to deliver a clean and reliable profile. 

Grown between 1,400 and 2,000 metres, this coffee reflects the unique conditions surrounding Lake Ayarza, a dramatic crater lake formed by ancient volcanic activity. Expect a balanced and structured cup with gentle acidity, subtle fruit character, and a smooth, rounded body, a refined take on classic Guatemalan profiles.
